Calorie counting dieters will love this, but so will everyone else as well. The fresh taste of this dressing means that you will hardly miss the oil. It is delicious simply poured over a green salad.
RECIPE INGREDIENTS2/3 cup water
1 teaspoon arrowroot
1 tablespoon dijon mustard
1/3 cup finely chopped shallots
1/4 cup sherry vinegar

DIRECTIONS
Combine the water and arrowroot in a saucepan. Bring to a gentle boil, stirring constantly. Remove from the heat when a gravy-like consistency is reached, about 1-2 minutes.
Place the saucepan into a mixing bowl that is one-fourth filled with ice cubes and water. Allow to reach room temperature. Mix the remaining ingredients into the arrowroot mixture.
Pour into a sterilized jar, cover, label if desired, and chill for up to 24 hours. This dressing will keep for 3-4 days in the refrigerator.
STERILIZING TIP: Start with clean equipment, dish towels, and especially hands. Check the jars for cracks or chips, discarding any that may be damaged. Also check the closures between the jars and lids, insuring that there is no seepage. Fill the jars with boiling water. Let stand for 10 minutes. Pour off the water and turn the jars upside down on clean dish towels to dry.
